Powered by electricity, the C4eD 10.10 ES generates steam by injecting or spritzing water into the cooking chamber. Its Advanced Closed System + (ACS+) ensures perfect steam saturation, automatic humidity adjustment in combi-steam mode, and fast, even heat transfer in convection cooking. It maintains a consistent cooking environment even when fully loaded.

Besides the three main operating modes, it has extra cooking functions:

Using your Convotherm C4eD 10.10 ES combi oven is a breeze. First, make sure it's properly hardwired as it comes with bare wire. Then, connect the 3/4 - inch water connection. When you're ready to cook, use the easyDial interface. The bright digital display and central dial let you quickly find and set the function you want. You can choose from steam, combi - steam, or convection cooking modes, and there are also extra functions like Crisp&Tasty, BakePro, and HumidityPro. Just select the appropriate settings based on what you're cooking, and you can even program and store up to 99 different cooking profiles. When loading the oven, use the 11 slide rails to arrange your 10 standard 12" x 20" pans. Remember, it can hold up to 110 pounds of food at once. Adjust the fan speed and humidity settings according to the recipe. For example, use a lower fan speed for delicate puff pastries. After cooking, take advantage of the ConvoClean automatic cleaning system. There's an automatic cleaning fluid dispenser, and you can choose from four cleaning levels depending on how dirty the oven is. This will help keep the oven hygienic. Some important notes: Only use the specified voltage (208V or 240V) at 60 Hz and 3 - phase power. If you need to update the software or upload new cooking profiles, use the USB port on the control panel. Also, be careful when opening the right - hinged door, especially when the oven is hot. Regularly check the water connection to ensure there are no leaks. And always follow the safety guidelines provided with the product.
